It's The Season of Pumpkin!!

October begins the season of "Everything Pumpkin"!!  

My favorite Pumpkin "something", is of course, Starbucks' Pumpkin Spice Latte!!  But unfortunately, we can't have those everyday :( 

Pumpkin Spice Latte

So I decided that I would share a recipe with you that is a season favorite at our house.  I know, it doesn't sound like it would be very good based on the title, but TRUST ME!!   It is WONDERFUL!! I have been making these for my family  for several years and it is a fall MUST HAVE!! 

Pumpkin Sloppy Joes 

1 pound ground beef
1/2 cup chopped onion
1 garlic clove, minced 
1 cup canned pumpkin
1 can (8 ounces) tomato sauce
2 tbsps brown sugar
2 tbsps prepared mustard
2 tsps chili powder
1/2 tsp salt 
8 hambuger buns, split
American cheese slices, optional 

In a large skillet or saucepan, brown ground beef. Drain fat. Add onion and garlic; cook until tender. Stir in the pumpkin, tomato sauce, brown sugar, mustard, chili powder and salt. Bring to a boil. Reduce heat and simmer for 10 minutes.  Spoon meat mixture onto buns; top with cheese slice. Broil just until the cheese melts (optional step). Place bun top in place and serve immediately. 
Makes 8 servings.
